Abstract

Premenopause is part of natural aging process in women indicated by the decrease of ovarial estrogen production, and usually followed by development of menopausal syndrome. Susumeno, skim milk fortified with 100 mg of soy isoflavone and 8 mg of Zn was given to premenopausal women for decreasing menopausal syndrome. This research aimed to evaluate the effect of susumeno on menopausal syndrome in premenopausal women. About 33 premenopausal women aged 43-52 years old in Purwokerto were choosen as respondent. Their menopausal syndrome were identified by using questioner. The answers were scored from 1 to 5 ; i.e., 1 = not detected; 2 = less detected; 3 = mildly detected; 4 = detected; 5 = much detected. It was revealed that some of menopausal syndromes had significantly decreased, especially vaginal dryness from less detected to not detected (p=0,01); fatigue from mildly detected to not detected (p=4,07E-05); mindless from mildly detected to not detected (p=0,022); and dyspareunia from less detected to not detected (p=0,036). Abstract

Margarine is a water in oil (w/o) emulsion product which is widely used for household cooking and baking industry. Consuming of margarine, which contains trans fatty acid may cause health problem due to the increase of LDL cholesterol. Since margarine is also a good carrier of phytosterol which prevent the absorption of cholesterol, there is a possibility to formulate a healthier margarine. In this research formulation and characteristics of products was investigated. The research work consisted of two steps: (1) supplementation of wheat germ sterol into margarine (two methods) and  (2) analysis of physical, chemical characteristics and hedonic score. Parameters of physical characteristics were melting point and emulsion stability, whereas chemical characteristics were water and oil contents. The hedonic test was carried out based on product?s color, odor, taste, texture, and spreadability. Results showed that method II of supplementation produced better margarine than method I, in which the concentration of sterol in the margarine was higher with a melting point similar to that of control, better emulsion stability, and higher hedonic score. Supplementation process was carried out by mixing sterol into fat phase melted at 50 0C, followed by mixing with aqueous phase at 4 0C. Sterol used for method II was extracted using mixed solvent of hexane and ethanol at the ratio of 1:2 (v/v), which was resulted from previous experimentation.

Abstract

Aim This study aimed to elicit the protective effect of Sargassum echinocarpum extract on endothelial dysfunction in thoracic aorta of streptozotocin-induced diabetic rats.Methods The animals were divided into 5 groups. The first was normal, the second was diabetic non treated animals. The third to fifth groups were the diabetic animals which given Sargassum echinocarpum extract (150; 300, and 450 mg kg-1 body weight, respectively) by oral gavage and extract treatment was given for 12 weeks. Diabetes was induced by single administration of streptozotocin (45 mg kg-1, i.p.), dissolved in freshly prepared 0.1 M citrate buffer, pH 4.5. Diabetes was confirmed ten days latter in streptozotocin induced animals showing blood glucose levels > 200 mg dL-1 (11.1 mmol L-1) as monitored in the blood from tail vein using glucometer. After the treatment period, the blood serum acquired was used for antioxidant enzymes assays and the thoracic aorta was used for vasorelaxation assay.Results There was a significant decrease in the activity of superoxide dismutase (SOD), catalase (CAT) and glutathione peroxidase (GSH-px) in diabetic rats (3.31 ± 0.12;67.17 ± 0.62;35.10 ± 0.83) comaped to control rats (9.97 ± 0.12;185.31 ± 0.23;116.38 ± 0.88). Administration of Sargassum extract increased the activity of SOD, CAT, and GSH-px. The diabetic rats exhibit endothelial dysfunction as shown by loss of vasodilatory response to acethylcholine (ACH). This was restored by administration of Sargassum extract.Conclusion Sargassum echinocarpum extract ameliorates oxidative stress and reverses the endothelial dysfunction associated with diabetes. Abstract

Diabetes mellitus is a spectrum of inherited and acquired disorderscharacterized by elevating blood glucose levels. Diabetesis an abnormal carbohydrate metabolism, therefore, diet therapyfor diabetics plays a key role in the management of thedisease. Most Indonesian people consume rice as source ofenergy and protein. Generally, diabetics consume very limitedrice because they believe that rice is the one of hyperglycemicfood, even though different rice varieties have large range ofglycemic index. The study aimed to evaluate hypoglycemicproperties by using rat assay and chemical characteristics of 10Indonesian rice varieties, i.e. Pandan Wangi, Rojolele, BengawanSolo, Cenana Bali, Memberamo, Celebes, Ciherang, BatangPiaman, Cisokan, and Lusi. Taj Mahal, an herbal ponni importedrice, was used as a comparison. Male Sprague Dawley rats (150-200 g body weight) were used for hypoglycemic assay. The ratswere fasted overnight before the blood glucose was measured inthe morning. The rats were then feed with 4.5 g rice per kgbody weight by oral administration, followed by 1 ml of 10%glucose solution in the next 30 minutes. The blood glucose wasmeasured for the next 30, 60, 90, and 120 minutes. Changes inblood glucose concentrations (mg dl-1) before and after the oraladministrations were calculated for each rice variety tested.Results showed that Cisokan and Batang Piaman were categorizedas low glycemic responses and Ciherang as high glycemic response,while the other varieties (Memberamo, Cenana Bali,Lusi, Bengawan Solo, Pandan Wangi, Celebes, and Rojo Lele)showed moderate glycemic responses. As the best hypoglycemicactivity, Cisokan contained high amylose (27.6%), fat (0.87%),total dietary fiber (6.24%), resistant starch (2.02%), and loweststarch digestibility (52.2%), which are ideal for diabetic’s consumption.Ciherang as the worst hypoglycemic activity had lowresistant starch (1.78%), low total dietary fiber (4.52%), and mediumamylose (23.0%). This study implies that Cisokan varietyis suitable for diabetic’s consumption.

Abstract

Rice bran oil has a potential in lowering blood cholesterol. The oil content extracted from rice bran isa influenced by several factors such as raw material and processing method. This research was conducted to study the effect of heating on the physicochemical characteristics of rice bran oil. The study was carried out at the Food Technology and Nutrition Laboratory and Biotechnological Science Laboratory of the Inter University Center, Bogor Agricultural University, from February to MAy 1997. Bran used was from IR64 rice variety obtained from a local milling rice in Tambak Dahan, Binong-Subang, West Java. Rice bran was subjected to different period of heating (0, 15 and 30 minutes) at 121oC by using an autoclave, then the oil was extraxted by using hexane solvent followed by standard processing at room temperature (28-30oC) and 40oC for two hours. The parameters observed were oil content and its quality such as saponification, iodine, acid, peroxide, tiobarbituric acid, and triglyceric acid values as well as oil color. The results showed that oil extracted from rice bran was high, ranging from 9.65 to 11.02%. Heating (sterilizing) of the rice bran for 15 and 30 minutes at 120oC proir to extraction increased the oil content. The Quality of rice bran oil extracted met the standard of AOAC.

Abstract

For long time vegetables were thought only as sources of several vitamins; however, it has been shown that vegetables contain other component, which is also important for maintaining body's health, i.e., dietary fiber. Dietary fiber is a group of polysaccharides oan other polymers, which cannot be digested by upper gastro-intestinal system of human. Dietary fiber can be grouped as soluble and insoluble dietary fiber, showing in different physiological effect. Soluble dietary fiber (SDF) is effective in preventing cardiovascular disease, while insoluble dietary fiber (IDF) can prevent the development of colon cancer, diverticulosis as well as obesity.Local vegetables found to contain high SDF (higher than 3,06% db) are: watercress, green bean, carrot, eggplant, lettuce, broccoli, spinach, string bean, and aubergine; while which contain high IDF (higher than 40,60% db) are: winged bean, watercress, chinese leaves, katuk leaves, lettuce, green bean, broccoli, carrot and spinach. Cooking (i.e. boiling, steaming and pan frying) decrease the IDF content of vegetables, while their SDF content is not affected by cooking treatments.

Abstract

    Antioxidant activity of various ginger extracts are different.  The aims of this work are to determine the antioxidant activity of ginger extracts on linoleic acid. The antioxidant activities were tested on  linoleic acid supplemented with water and dichloromethane extract of ginger.   The antioxidant  activity was tested by measuring malonaldehide absorbance.  Total phenol and iron content  of the extracts were analyzed by spectrometry.  This research showed that antioxidant activity of water and dichloromethane extract of ginger was stronger than a-tocopherol, and antioxidant activity of dichloromethane extract is stronger than water extract of ginger.  Antioxidant activity of ginger extracts, seems to be correlated with  the  total phenol and iron contents.

Abstract

Corn silo business of Rido Manah Farmer Groups is one of 56 units of corn silo that was developed by the Department of Agriculture. This research aimed to (1) identify and analyze the feasibility of business development in corn silo of Rido Manah Farmer Groups, (2) identify the internal and external factors affecting business development in the corn silo of Rido Manah Farmer Groups, (3) determining the appropriate strategy of business development of corn silo at farmer group.Data collection method used was the primary and secondary data were conducted through literature search, documents and reports of related institutions. Analysis reveals that of average farm productivity of farmers obtained from Farmers Group was slightly higher (4.59 tons/ha) compared to non-member farmers group (4.29 tons/ha). Size of farm management efficiency could be viewed by using the coefficient of revenue and expense ratio (R/C). R/C Farmer Groups (1.82) as well as non members (1.71) was greater than one, this indicated whether or not affiliated with Farmer Groups, Corn farming remain efficient and profitable, because the reward obtained was still higher than the costs. Corn silo business of Rido Manah farmer groups had been well implemented. BEP was 1.646,38 tons/year;B/C ratio was 1.07; PBP was 2,78 years; NPV with Discount Factors (DF) 14% was Rp. 127.019.755,6 and IRR was21%. Those values showed that the corn silo business managed by Rido Manah Farmer Group was feasible. Sensitivity analysis showed that investment in the business unit of corn silo was vulnerable to an increase and decrease in corn prices where the value of eligibility criteria was not feasible. The total value of internal strategic matrix3.013,meaning that the business unit of Corn silo Rido Manah Gapoktan had this high internal factors and external strategic matrix in total of 3.019 showed the response given by the corn silo business of Rido Manah farmer groups to the external environment was high. The best strategic alternative analysis obtained 6 most effective strategic business performed by silo corn which link by (1) establishing partnerships, (2) increasing the role of managers, (3) developing of process of corn products, (4) active collaborating, (5) increasing the capacity of equipment and machinary, and (6) increasing production and productivity of corn farmers.

Abstract

This research was aimed to determine the influence ofzingiberaceae species and the influence ofslice thickness before drying process by using cabinet dryer to the antioxidant content (total phenolics and curcumin) and antioxidant activity (absorbance of peroxide and malonaldehide ). The results of the research showed that total phenolics of turmeric extract (216.57 ppm) and temulawak (190.41 ppm) > ginger (127,97 ppm) > white turmeric extract (31,13 ppm), where as curcumin content of turmeric (55,93 ppm) and temulawak extract (48,95 ppm) > white turmeric (6,51 ppm) and ginger extract (4,67 ppm). The antioxidant activity that is indicated peroxide and malonaldehide forming from 1 inoleic acid which is supplemented to temulawak extract, turmeric, and ginger extract > white turmeric extract. Turmeric, temulawak, and ginger extract had the antioxidant activity higher than tocopherol, where as white turmeric had lower antioxidant activity than a tocopherol. The slicing sample with slice size of 4 mm before drying process with cabinet dryer had rate and antioxidant activity better than that of 2 mm. The total phenolics of zingiberaceae extract with slice size of 4 mm (161,86 ppm) > 2 mm (121,18 ppm), and the curcumin content of zingiberaceae extract with slice of 4 mm (34,58 ppm) > 2 mm (23,45 ppm). The slice of 4 mm had a relatff higher value than the slice of 2 mm to the antioxidant activity zingiberaceae extract that is indicated peroxide and malonaldehide formation.

Abstract

Macro and microvascular disease are currently the principal causes of morbidity and mortality in diabetes mellitus patients. Loss of the modulatory role of  the  endothelium  may  be  a  critical and  initiating factor  in  the  development of diabetic  vascular  disease.  Polyphenol is known behave protective active compound to function endothelium cell.  Polyphenol that contained in brown algae was phlorotannin.  The  aim  of  the  present  study  was  to  investigate  the effects  of  S.  echinocarpum extract  on  endothelial  dysfunction  in  aorta  of streptozotocin  diabetic  rats.  This experiment was conducted by complete randomized design in 2 months old of male albino Sprague Dawley strain of rats, 125-150 grams body weight. The rats divided in fivegroups, each group consist of  6  rats.  First  group:  normal  which  is  given  1  mL  of  extract  vehicle  orally; second  group:  diabetic  rats  which  is  given  1  mL  of  extract  vehicle  orally;  third group:  diabetic  rats  which  is  treated  extract  150  mg/kg  BW  dose  orally;  fourth group: diabetic rats which is treated extract 300 mg/kg BW dose orally; and fifth group: diabetic rats which is treated extract 450 mg/kg BW orally. Diabetic rats prepared by injection of 45 mg/kg  streptozotocin  intraperitoneally.  Extract was given to diabetic rats during 90 days.  The  result  showed  that  brown  algae extract  rearrange  endothelium  cell  function  of  diabetic  rats  by  increasing relaxation,  releasing  of  EDRF  and  decreasing  of  MDA.  Based on these observations,  it  was  concluded  that  S.  echinocarpum extract  recovers  the endothelial  dysfunction  associated  with  diabetes.  This effect appears to be  due to its antioxidant properties.Key words: diabetes, EDRF, endothelial dysfunction, MDA, S.
