Abstract

The Control of Mangosteen Yellow Latex Using Seaweed Extract and Potassium Fertilizer. The yellow latex disease decreases fruit quality of mangosteen because of exogenic latex causes dirty fruit and the endogenic latex makes the bitter fruit taste, then it does not deserve to be consumed. The causal agent of the disease was Verticillium alboatrum, Fusarium oxysporum, and Pestalotia macrotricha. Control using synthetic chemical for the fungus is severely decreasing the quality of the environment, therefore the use of organic agent such as botanical fungicide and the use of potassium fertilizer is recommended. The purpose of this research is to find the dose of potassium fertilizer and sea weed extract to decrease yellow latex disease of mangosteen fruit. The research was done in-vivo in the field with indicator of the decrease of yellow latex incident. The research showed that potassium fertilizer of 1.5 kg/plant combine with 1% extract was the best treatment with the lowest yellow latex incident of 9.4%. The treatment effective decreasing the disease of 56.3% compared to control and 56.9% when it is compared to 0,2% Antracol fungicide.

Abstract

Induction of Mutation of Red Chili (Capsicum Annuum L.) Using Ethyl Methanesulfonate at Several Soaking Periods.One way to increase genetic variation is through induced mutation usingchemical mutagen. Ethyl methanesulfonate (EMS) is a chemical compound that can cause mutationsand commonly used in plant. In this study seeds of red chili were treated using EMS 1% through seedsoaking. Seeds of red chili were soaked with EMS 1% in phosphate buffer pH 7 for 6, 9, 12 and 15hours at room temperature. As control, seeds were soaked in phosphate buffer pH 7. This study aimsto evaluate, physiological and reproductive characters of plants after treated with EMS. Experimentwas conducted in an open field with 5 replicates for each treatment. Results showed that concentrationof chlorophyll a, b and total chlorophyll increased in plants derived from seed treated with EMS 1% for9 hours compared to control and other soaking periods. Soaking seeds with EMS 1% for 12 hoursincreased viability of pollen compared to control and other treatments. The first time of floweringoccurred earlier at 6 and 9 hours soaking period.

Abstract

Research has been conducted to determine the quality of Sumbawa horse milk at room temperature storage. Each sample (of 5 horse) was divided into 5 cups Beaker and then stored at room temperature. Observations were made as many as 6 times to checked and tested on parameters including pH, alcohol, smell and a flavor test. This study uses a randomized block design (RBD), using 5 horses as a group, and time observations on days 0, 1st, 2nd, 3rd, 4th, and 5th as a treatment, so tested 30 samples. The results showed that the pH of milk has significantly (P>0,05) lower quality. On the alcohol test showed positive results and the test on the smell and flavor test shaved changes quality after the 2nd day. Of observations Sumbawa horse milk quality decrease very markedly decreased pH (P<0.01) on day 0 to day 1 and significantly (P<0.05) decreased from day 1 to day 2 but not significant (P>0.05) decreased from day 2 to day 3 during storage. Alcohol test resistance at Sumbawa horse milk increasingly distorted and react positively. On the smell and flavor test Sumbawa horse milk taste very significant (P<0.01) deviates smells during storage at room temperature begins 2nd day. To maintain the quality of Sumbawa horse milk should be stored no more than 2 days at room.

Abstract

Tiren chickens are basically carcasses, namely chickens that die not because of slaughter, but chickens that have previously died due to poor endurance during the trip or affected by the disease then deliberately slaughtered for sale on the market. This study aims to detect the possibility of yesterday's sale of dead chicken meat (tiren) sold in four traditional markets in Denpasar City. The method used in this study is the purposive sampling method, which was a total of 72 samples of chicken meat were taken from four traditional markets in Denpasar City, each with three samples per market with six replications. The variables tested in this study were detection of tiren chicken with Malachite green test and pH test for chicken meat. The results showed that 19.44% (14/72) samples showed positive Malachite green test and average chicken meat pH 5.93 (5.32 - 6.45). Based on the results of the study it can be concluded that 19.44% chicken meat sold in four traditional markets in Denpasar City, it is suspected that tiren chicken is suggested to consumers to be more selective in choosing chicken meat for consumption

Abstract

The study aimed to determine effect of organic acid and anorganic (Orgacidâ„¢) as an acidifier in diet to body weight, feed concumption and feed convertion. The research used 24 pigs landrace male post lactation aged 30 days until 58 days. Feed stuffs used Charoen 550â„¢ Made in PT.Charoen Pokphand Indonesia Tbk. The treatments given were: feed without Orgacidâ„¢, combination Orgacidâ„¢ 1g/kg feed, combination Orgacidâ„¢ 2g/kg feed, combination Orgacidâ„¢ 4g/kg feed. Variables measured were body weight, feed concumption, feed convertion. Data were subjected to analysis of variance. The result of the research showed that the addition of Orgacidâ„¢ 1g/kg to 4g/kg in feed did not significantly affected (P>0.05) to body weight, feed concumption and feed convertion.

Abstract

These study aims were to determine the quality of bali beef and Wagyu beef stored at 4oC. This study used a completely randomized factorial pattern design. Meat quality parameters studied included pH, water content, water holding capacity, and texture. The results showed that the pH value of Wagyu beef and bali beef increased during storage at cold temperatures. While the water content, water binding capacity, and texture of both types of meat have decreased. Significant changes occurred in observations of the fourth day. It can be concluded that the storage of Wagyu and bali beef at 4oC was not effective for a period of more than 3 days.

Abstract

This research aim was to know the influence of immersion in Indonesian bay leaf (Syzygium polyanthum) infusion for the quality and durability of pork in room temperature (280C). A total of 80 pork samples (loin) tested in the research used factorial randomized complete block design, with 2 factor such as; four factors of concentration: 0%, 5%, 10% and 15% of Indonesian bay leaf infusion, four factors of exposure time: 0, 3, 6, and 9 hours. The parameters of pork quality have checked; water holding capacity, water content, pH, color and texture. The result showed that submersion of pork in Indonesian bay leaf infusion did not affect to water holding capacity and water content of pork but showed a noticeable affect to pH, color and texture. Pork that marinated into bay leaves infusion showed a good durability during exposure in room temperature until 9 hours. It can be concluded that the infusion of bay leaves at various concentrations were able to maintain the quality of pork.

Abstract

Pesanggaran abattoir is the largest slaughterhouses in Bali. The purpose of this study was to determine the beef quality in Pesanggaran abattoirs tested from pH value and water holding capacity and the relationship between the two variables. Fifteen samples of beef taken from longisimus dorsi tested the qualities based on the pH value and water holding capacity during the process of the observation period starting at the first hour until eight. The results showed that, the quality of beef produced in Pesanggaran abattoirs has an ultimate pH 5.51 at the 7th hour after slaughter and water holding capacity with a value of 60.4% at the 7th hour after slaughter. It can be concluded that the pH and WHC of beef at Pesanggaran abattoir decreased from first hour to 7th hour and there are positive correlation between pH and WHC of beef.

Abstract

Penelitian ini bertujuan untuk mengetahui nilai konsistensi, susut masak, dan bakteri Coliform pada daging sapi di Rumah Pemotongan Hewan (RPH) dan di pasar tradisional di wilayah Denpasar. Penelitian ini menggunakan enam sampel masing-masing dua sampel daging di RPH Pesanggarahan Denpasar, dua sampel dari Pasar Badung, dua sampel dari Pasar Kreneng Denpasar dan dilakukan enam kali pengulangan. Metode pengujian konsistensi menggunakan 10 orang panelis untuk menguji konsistensi daging sapi. Pengujian susut masak dilakukan dengan cara pemasakan daging sapi pada panci yang berisi air dengan suhu 90oC selama 30 menit. Pengujian bakteri Coliform dilakukan dengan cara penanaman pada media Eosin Methylene Blue Agar (EMBA). Hasil penelitian diperoleh rataan konsistensi daging di RPH Pesanggaran, Pasar Badung dan Pasar Kreneng memiliki skor 1, Analisis statistik menunjukan konsistensi daging sapi di RPH dan di pasar tidak berbeda nyata. Rataan susut masak daging sapi di RPH Pesanggaran sebesar 41%, Pasar Badung sebesar 39,5% dan Pasar Kreneng sebesar 42%. Analisis statistik menunjukan susut masak daging sapi di RPH dan di pasar tidak berbeda nyata. Jumlah bakteri Coliform dalam LogY pada daging sapi di RPH Pesanggaran yaitu 5,6; Pasar Badung yaitu 5,7; dan Pasar Kreneng yaitu 5,8. Analisis statistik menunjukan bakteri Coliform pada daging sapi sangat berbeda nyata. Sampel daging sapi yang diambil di RPH Pesanggaran, Pasar Badung dan Pasar Kreneng memiliki konsistensi liat, tidak ada perbedaan nilai susut masak daging serta uji cemaran bakteri menunjukan kecenderungan peningkatan jumlah bakteri Coliform dari daging sapi di RPH sampai ke pasar.

Abstract

This study aims were to determine the overall amount of bacterial contamination in some traditional markets of South Denpasar District using Total Plate Count test. Sampling was conducted in four traditional markets and each market was picked up by three marketers with six repetitions. The measured variable is the amount of TPC contamination on broiler chicken grown on Nutrient agar medium. The measurement data were analyzed by ANOVA test and then continued with Duncan's new Multiple Range Test. The results showed that the amount of TPC contamination in broiler meat on Nyanggelan Market 45.58x104 CFU/g, Sudha Merta Market 47.28x104 CFU/g, Kertha Boga Market 55.64x104 CFU/g and market of I Made Putra 5808x104 CFU/g and after analyzed statistically between Nyanggelan Market with Sudha Merta Market and between Market Kertha Boga with Market of Made Putra is not significantly different (P>0.05). While between Nyanggelan market and Sudha Merta Market with Kertha Boga Market and I Made Putra Market is significantly different (P<0.05). Based on the result of the research, it can be concluded that TPC contamination in broiler chicken sold in some markets in South Denpasar Subdistrict is still below standard limit so it is feasible to be consumed.
