Abstract

Industri pangan yang beroperasi di pasar global harus memiliki sistem manajemen keamanan dan mutu pangan yang berstandar internasional. Tujuan penelitian ini adalah untuk mengetahui tingkat kepuasan karyawan dalam penerapan sistem manajemen keamanan dan mutu pangan ISO 22000:2005 terhadap kinerja perusahaan PT. Aerofood ACS Denpasar. Penerapan sistem ISO 22000:2005 diukur atas dasar empat elemen kunci yaitu penerapan program persyaratan kelayakan dasar, prinsip HACCP, komunikasi interaktif dan penerapan sistem manajemen sumberdaya.  Sedangkan kinerja perusahaan diukur dengan metode Balanced Scorecard. Hasil penelitian menunjukkan bahwa 88,56% karyawan puas terhadap penerapan sistem ISO 22000:2005 dan 81,93% puas terhadap kinerja perusahaan. Penerapan sistem ISO 22000:2005 berpengaruh positif dan signifikan terhadap kinerja perusahaan. Dari keempat elemen kunci tersebut ditemukan bahwa penerapan program persyaratan kelayakan dasar berkontribusi paling tinggi terhadap peningkatan kinerja dalam hal keuangan, kepuasan pelanggan, proses bisnis internal dan kinerja dari perspektif pembelajaran dan pertumbuhan. Sebelum penerapan sistem ISO 22000:2005, PT. Aerofood ACS Denpasar hanya melayani sebanyak 7 maskapai penerbangan, akan tetapi setelah sukses menerapkan sistem tersebut, terjadi peningkatan jumlah pelanggan yang drastis yaitu sebanyak 23 maskapai penerbangan. Food industries operating in the global market must have a safety management system and international quality standards of food. The aimed of this research was to determine the level of employee satisfaction in the implementation of safety management system and food quality ISO 22000: 2005 towards the performance of PT. Aerofood ACS Denpasar. The implementation of ISO 22000: 2005 was determined using the basic of four key elements, namely the prerequisite programs, HACCP principles, interactive of communication and implementation of resource management system. Meanwhile, the company's performance was determined by the method of Balanced Scorecard. The results showed that 88.56% of employees were satisfied by the implementation of ISO 22000: 2005 and 81.93% were satisfied by the performance of the company. The implementation of ISO 22000:2005 gives positive and significant effect towards company performance. Among the four key elements of the program that were used, it was found that the prerequisite program had the highest impact to improve the performances in terms of financial, customer satisfaction, internal business processes and performance from the perspective of learning and growth. Before PT. Aerofood ACS Denpasar implemented ISO 22000: 2005, it only had cooperation with 7 airlines, but after the success of ISO?s implementation, the number of customers has significantly increased to be 23 airlines.

Abstract

The aim of this research was to determine the distribution pattern of subsidized fertilizer in Klungkung regency, as well as to determine the distribution pattern of subsidized fertilizer that produced the minimum distribution cost. The research method used in the study, were a survey, measuring the distance and collect secondary data. The survey was conducted to official distributors to obtain the amount of farmer groups which recieved the subsidized fertilizer. The information of farmer groups? distance to the official distributors, received fertilizer, and the cost spent to distribute the fertilizer were needed to calculate the unit cost of distribution. All of those information were obtained by field survey and direct measurement in location. The data obtained then was analyzed by applying three methods of transportation that was North West Corner Method, the Lowest Cost Method and The Vogel's Approximation Method. The results indicated that the methods produced different costs in which the minimum distribution cost by Rp 6.065.846,00 was produces by the Lowest Cost Method. The value of the result is vsame with the transportation minimum cost that produced by the distribution pattern of subsidized fertilizer at this time in Klungkung regency, so it can be concluded that the distribution pattern of subsidized fertilizer in Klungkung regency at this time is meeting with the all criteria distribution pattern with transportation minimum cost.

Abstract

This study aimed to determine the marketing distribution channel to analyze the absorption of paprika from the farmer in Baturiti district to the last costumers to calculate the marketing margins obtained in each distribution channel. This research was conducted in July-August 2018. This study used purposive sampling survey. There are five distribution channels of paprika from the farmer in Baturiti regency to the last costumers namely: 1st line (Farmer ? Traditional Market Trader ? costumers), 2nd line  (Farmer ? Local Collector ? City Collector? Consumer), 3rd  line  (Farmer ? Local Collector ? City Collector? Costumer), 4th line (Farmer ? City Collector? Consumer), 5th line (Farmer ? City Collector? Consumer). The distribution shows that the rate market of paprika and farmer produce 2.655 monthly. Absorption of paprika rate that is distributed by farmer  to local collector, city collector, and traditional market are 25,6 percent, 38,8 percent, 35,6 percent. Paprika  that is distributed by local collector to city collector and traditional market are 19,6 percent them 6 percent. City collector obtain 58,4 percent paprika from farmer and local collector then later distribute 29,8 percent, 21,5 percent, 7,1 percent the paprika to each hotel or restaurant, supermarket, and traditional market. City collect obtain 58,4 percent paprika for faram and local collect then later distribution the to hotel or restaurant, supermarket and traditional market by the percentage of 29,8 percent, 21,5 percent, 7,1 percent respectively. Based on the five lanes determined in this study, lane III is the longest distribution, but the lane has the highest marketing margin and profit margin, lane III and V. Line I is the shortest distribution path of the five lanes, and has a marketing margin and lowest profit because the marketing costs incurred are small and the selling price at the final consumer level is also the lowest among the other five lines.

Abstract

Tujuan dari penelitian adalah ini untuk mengukur tingkat pemahaman karyawan terhadap penerapan Integated Management System (IMS), menganalisis kinerja karyawan, dan menentukan pengaruh IMS terhadap kinerja karyawan di perusahaan nanas kaleng. Aspek penerapan IMS (X) yang diukur meliputi pelanggan (X1), keamanan pangan dan kehalalan (X2), keselamatan dan kesehatan kerja (X3), lingkungan (X4), dan undang ? undang (X5). Sedangkan aspek kinerja karyawan (Y) yang diukur meliputi berfikir jernih (Y1), kolaborasi (Y2), kreatif dan berani (Y3), kompetensi (Y4), dan fokus eksternal (Y5). Penelitian ini menggunakan metode survei melibatkan 346 responden yang dipilih dengan metode stratified random sampling. Tiap ? tiap variabel penelitian diukur dengan lima buah indikator dengan lima peringkat skala pengukuran. Hasil penelitian menunjukkan bahwa rata ? rata tingkat pemahaman karyawan terhadap penerapan IMS sebesar 4,33 yang diartikan paham dan rata ? rata kinerja karyawan sebesar 4,18 yang diartikan baik. Penerapan IMS berpengaruh positif dan signifikan terhadap kinerja karyawan. Pengaruh penerapan IMS terhadap berfikir jernih karyawan dinyatakan dengan persamaan regresi berganda Y1 = 0,364X1 + 0,264X2 + 0,146X3 + 0,205X5 (R2 = 0,992), terhadap kolaborasi karyawan dinyatakan dengan persamaan Y2 = 0,302X1 + 0,187X2 + 0,264X3 + 0,233X4 (R2 = 0,993), terhadap kreatif dan berani karyawan dinyatakan dengan persamaan Y3 = 0,268X1 + 0,299X2 + 0,209X3 + 0,215X4 (R2 = 0,992), terhadap kompetensi karyawan dinyatakan dengan persamaan Y4 = 0,315X1 + 0,418X2 + 0,191X3 (R2 = 0,990), dan terhadap fokus eksternal karyawan dinyatakan dengan persamaan Y5 = 0,379X1 + 0,375X2 + 0,194X3 (R2 = 0,989). The aims of this research were to measure the employees level of understanding on Integrated Management System (IMS) implementation, to analyze employees performances, and to determine the effect of IMS implementation on employees performances in canned pineapple company. Measured IMS implementation (X) aspect include customer (X1), food safety and halal (X2), safety and health (X3), environmental (X4), and law (X5). Meanwhile, measured employees performances (Y) include clear thinking (Y1), collaboration (Y2), creative and courage (Y3), expertise (Y4), and external focus (Y5). This research used survey methodology involving 346 respondents who selected by using stratified random sampling methodology. Each of variables was determined by five indicators with five level measurement scale. The result showed that the avarage level of employee understanding on IMS implementation was 4,33 which means understand and the average employees performances was 4,18 which means good. The IMS implementation has positive and signifiant effect on employees performances. The effect of IMS implementation on employees clear thinking was showed by multiple linear regression Y1 = 0,364X1 + 0,264X2 + 0,146X3 + 0,205X5 (R2 = 0,992), on employee collaboration is showed by equation Y2 = 0,302X1 + 0,187X2 + 0,264X3 + 0,233X4 (R2 = 0,993), on employee creative and courage is showed by equation Y3 = 0,268X1 + 0,299X2 + 0,209X3 + 0,215X4 (R2 = 0,992), on employee expertise is showed by equation Y4 = 0,315X1 + 0,418X2 + 0,191X3 (R2 = 0,990), and on employee external focus is showed by equation Y5 = 0,379X1 + 0,375X2 + 0,194X3 (R2 = 0,989).

Abstract

Sistem rantai pasokan ikan tribang saat ini belum memberikan kesejahteraan kepada para pelaku usaha khususnya pedagang kecil. Tujuan penelitian ini adalah (1) mengetahui struktur, mekanisme, dan kelembagaan rantai pasokan ikan tribang; (2) menemukan langkah strategis untuk meningkatkan kinerja rantai pasokan ikan tribang. Penelitian ini terdiri dari dua tahap, tahap pertama mengetahui struktur, mekanisme, kelembagaan rantai pasokan menggunakan analisis deskriptif kualitatif dan tahap kedua mengetahui prioritas rekomendasi menggunakan metode Analitycal Hierarchy Process (AHP). Pengambilan sampel pelaku rantai pasokan menggunakan metode purposive sampling, snowball sampling, dan non probability sampling. Hasil penelitian menunjukan bahwa rantai pasokan ikan tribang terdiri dari sembilan pola aliran rantai dimana mekanisme rantai pasokan ikan tribang bersifat tradisional dan kelembagaan rantai pasokan ikan tribang bersifat perdagangan umum. Berdasarkan metode AHP, prioritas rekomendasi dalam meningkatkan kinerja rantai pasokan ikan tribang yaitu kriteria meningkatkan nilai tambah produk, alternatif responsiveness (kemampuan reaksi rantai pasok), dan indikator siklus waktu pemenuhan pesanan menjadi prioritas yang paling berperan penting.   Supply chain system of tribang fish currently does not provide welfare to people business, especially small traders. The purpose of this study are (1) to know the structure, mechanism, and institutional supply chain of tribang fish; (2) find strategic steps to improve the performance of tribang fish supply chains. This study consisted of two stages, the first stage knowing the structure, mechanism, institutional supply chain using qualitative descriptive analysis, and the second stage knowing the priority recommendations using the Analitycal Hierarchy Process (AHP) method. Sampling of supply chain actors uses purposive sampling, snowball sampling, and non probability sampling methods. The results showed that tribang fish supply chain consisted of nine chain flow patterns where the tribang fish supply chain mechanism was traditional and the tribang fish supply chain institution was general trading. Based on AHP method, priority recommendations to improving the performance of tribang fish supply chains are criteria of increasing product added value, alternative of responsiveness (supply chain reaction capabilities), and indicator of  cycle order fulfillment are the most important priorities.

Abstract

Tujuan penelitian ini adalah untuk mengetahui tingkat pemahaman petani terhadap budidaya kopi dan pengaruhnya terhadap produktivitas. Aspek budidaya yang diamati meliputi persiapan lahan, pengatur intensitas cahaya, teknik tanam, pemuliaan tanaman, aplikasi pupuk, pengendalian hama tanaman, peremajaan tanaman dan aspek pemanenan kopi. Penelitian ini melibatkan 45 responden yang dipilih dengan menggunakan simple random sampling dari petani anggota kopi MPIG Kintamani Bali. Hasil wawancara indikator dari variabel penelitian nilai tertinggi diperoleh peremajaan tanaman dan panen kopi terendah. Hasil analisis data dengan Confirmatory Factor Analysis (CFA) dan Multiple Regression Analysis (MRA) menunjukkan bahwa ada tiga faktor budidaya yang relevan berkontribusi terhadap pencapaian produktivitas tanaman, yaitu persiapan lahan, teknik penanaman dan peremajaan tanaman. Teknik persiapan lahan dan penanaman memberikan efek positif pada produktivitas kopi arabika tetapi, peremajaan tanaman memberikan efek negatif. Teknik penanaman memiliki pengaruh paling dominan terhadap produktivitas tanaman kopi arabika. Diharapkan bahwa produksi panen kopi arabika di Bali (0,5 ton / Ha) kopi dapat ditingkatkan produksi kopi nasional. The aims of this study were to determine level of understanding of farmers on coffee cultivation and its effect on productivity. Observed cultivation aspect include land preparation, light intensity regulator, planting techniques, plant breeding, fertilizer application, plant pest control, plant rejuvenation and coffee harvesting aspect. This research involved 45 respondents selected by using simple random sampling from coffee member farmers of MPIG Kintamani Bali. The results of the indicator interviews of the highest value research variables obtained plant rejuvenation and lowest coffee harvest. The results of data analysis with Confirmatory Factor Analysis (CFA) and Multiple Regression Analysis (MRA) showed that there were three relevant cultivation factors contributing to the achievement of crop productivity, namely land preparation, planting techniques and plant rejuvenation. Land preparation and planting techniques gave a positive effect on productivity of arabica coffee but, plant rejuvenation gave negatively effect. Planting techniques have the most dominant influence on the productivity of arabica coffee crops. It was expected that the production of arabica coffee harvest in Bali (0.5 ton / Ha) of coffee could be improved the national coffee production.

Abstract

The purpose of this study was to determine the effect of using brine with different types of salt on cooling fish and its effect on cooling load, so that a combination of treatments that produced the lowest cold point and maximum ability were obtained to eliminate the total heat energy in fish. The raw materials used in this study are salts of NaCl, KCl, CaCl2 and tuna. The cooling process in this study uses ice and salt (brine) solutions with concentrations of each type of salt, namely 2%, 7%, and 12% of the weight of the cooling media. In this research, the first two stages were carried out, namely with air load, then continued with the hot load of fish for each cooling medium on different styrofoam boxes. From the results of this experiment, a decrease in the maximum cooling point of brine temperature of -2,46 °C was found in the treatment of NaCl salt concentration of 12% (a1b3), then brine solution which was able to keep the fish temperature at the lowest is -1.4 ° C from treatment a1b3 (NaCl salt) concentration of 12%.

Abstract

Telah dilaksanakan penelitian terkait perancangan dan pembuatan alat distribusi ikan segar menggunakan media pendingin ice pack untuk pedagang ikan keliling. Penelitian dilaksakana bertujuan untuk merancang dan membuat alat distribusi ikan segar yang dapat mempertahankan suhu ikan segar selama transportasi dan penjualan. Penelitian ini terdiri dari dari beberapa tahapan diantaranya identifikasi kebutuhan, perancangan fungsional, perancangan structural dan uji kinerja. Alat distribusi ikan segar yang dibuat tersusun atas ruang penyimpanan ikan, media pendingin ice pack, dan dudukan ruang penyimpanan. Sedangkan untuk pengujian kinerja terdiri dari capaian suhu ruang penyimpanan ikan dalam kondisi kosong, capaian lama waktu alat distribusi ikan dalam mempertahankan suhu rendah ikan, pengukuran nilai Coefficient of Performance (COP), dan penilaian mutu ikan sebelum dan sesudah transportasi dan penjualan dengan uji organoleptik. Hasil pengujian kinerja menunjukkan bahwa capaian suhu terendah ruang penyimpanan ikan adalah -12.30C dengan lama pendinginan hingga batas atas 50C adalah 14.3 jam. Alat distribusi ikan segar yang dibuat dapat mempertahankan suhu rendah ikan dengan batas atas 50C selama 32,03 jam, dengan nilai COP sebesar 0.67.  Berdasarkan uji mutu ikan didapatkan bahwa nilai mutu ikan yang dijual sebelum, setelah transportasi dan setelah penyimpanan adalah 8.0, 7.4, dan 6.2.   Research on fresh fish distribution tool using ice pack as cooling media for small-scale fresh fish retailer was conducted. The research aimed to design fresh fish distribution system for small-scale fresh fish retailer which can maintain the quality of fresh fish during transportation. This research was carried out through several stages, i.e. identification of needs, functional design, structural design and performance test. Fresh fish distribution tool using ice pack as cooling media for fresh fish small-scale retailer consisted fish storage room, fish storage room cover, ice pack, rack and fish storage stand. Performance test was carried out by observing the room temperature of fish storage room in unloaded condition and fish temperature during 4 hours transportation, determining the coefficient of performance (COP) value and observing the fish quality during transportation with organoleptic test. The result showed that the room temperature of fish storage room in unloaded condition could reach -12.30C after 24 minutes operation and maintain temperature with 50C upper limit for 14,3 hours, the distribution tool using ice pack as cooling media could maintain the fish temperature with 50C upper limit for 32.03 hours and organoleptic quality values before transportation, after transportation and after 12 hour storage were 8.0, 7.4, and 6.2. Values of COP was 0.67. This result has fulfilled the requirement of fish quality standard according to national standardization institution.

Abstract

Tuna has a high protein and water content, and has solid meat. But tuna is also very easy to damage. The cause of damage fish is a high water content which can cause microorganisms to multiply easily. Fumigation with  liquid smoke is safer and more practical than conventional fumigation, because liquid smoke contains phenol, carbonyl and organic acids which are useful for providing a distinctive taste and as preservatives in fish. The liquid smoke comes from stem of tabah bamboo (Gigantochloa nigrociliata Buse-Kurz). The purpose of this study was to determine the effect of temperature and heating time on the characteristics of processed tuna which soaked in liquid smoke stem of tabah bamboo and to find out the temperature and heating time of the best organoleptic characteristics of processed tuna which soaked in a solution of liquid smoke stem of tabah bamboo. The method used is Factorial Completely Randomized Design with two factors. The first factor is the treatment of heating temperature which consists of three levels, and the second factor is the treatment of heating time which consists of three levels. Each treatment was repeated twice. The best combination of treatments is the heating temperature of 100?C, heating for 4 hours produce pH 5.5, water content 58.06%, ash content 1.69%, protein content 18.29%, hedonic color test 3.94, aroma test hedonic 4.28, hedonic texture test 4.72, hedonic taste test 4.5, texture scoring test 4.83, and the overall acceptance scoring test is 4.39. Abstract

Penelitian ini bertujuan untuk menganalisis sistem produksi ikan tuna loin segarmenggunakan konsep Lean Thinking. Fokus dari analisis sistem produksi menggunakan konsep lean adalah mengurangi waktu tunggu dan mengurangi pemborosan sehingga pada akhirnya akan meningkatkan produktifitas. Hasil penelitian menunjukkan bahwa, ditemukan rata-rata waktu satu siklus produksi tuna loin segar di CV. Kyu Karya Abadi yaitu mencapai 299 menit, dengan distribusi 67 menit dihabiskan dari aktivitas-aktivitas value added dan sisanya 232 menit dihabiskan dari aktivitas-aktivitas non value added. Berdasarkan pengamatan terhadap tujuh jenis pemborosan, ditemukan terdapat satu jenis pemborosan yang terjadi di CV. Kyu Karya Abadi yaitu dikarenakan adanya produk cacat. Selain itu, pemborosan lainnya pada proses produksi di CV. Kyu Karya Abadi menggunakan process activity mapping terjadi oleh adanya jarak ruang produksi utama dengan ruang penyimpanan yang kurang berdekatan. Masih belum efisiennya proses produksi tuna loin segar di CV. Kyu Karya Abadi perlu menjadi perhatian pihak perusahaan untuk meningkatkan produktifitas produksi. Dari hasil tersebut diatas, dapat diberikan rekomendasi agar perusahaan menekan supplier untuk mengirimkan barang dengan kualitas terbaik sehingga dapat menurunkan persentase cacat.   The aim of this study is to analyze the production system of fresh tuna loin using Lean Thinking concept. The focus of the analysis production system using the lean concept are to reduce the waste and waiting time that will ultimately increase productivity. The results of the research showed that, the average cycle time of the production of fresh tuna loin in CV. Kyu Karya Abadi reached 299 minutes, in which 67 minutes was spent on value added activities andthe rest 232 minutes was spent on the activities of non-value added. Based on observation of the seven types of waste, found there was one type of waste occur in the CV. Kyu Karya Abadi which was due to the defective products. Moreover, waste of the production process according to the process mapping activity in CV. Kyu Karya Abadi occurred by the distance of the main production room with the storage room which is less contiguous. Since there was still inefficient in the production processes of fresh tuna loin in CV. Kyu Karya Abadi, it the attention of the company is needed to increase the productivity of the production. Based on those results, it can be recommended that the company should pressing the supplier to deliver the highest quality goods, therefore they can reduce the percentage of defective.
