Abstract

The utilization of starter cultures is vital for dairy fermentation industries. Lactobacillus paracasei M104 and Pediococcus pentosaceus M103 have been isolated from goat milk and were demonstrated to acidify goat milk during fermentation. This study was conducted to compare the physicochemical and microbial qualities of goat milk fermented using these starter cultures either as a single starter or combined in goat milk. The treatments were L. paracasei M104 (Lp) and P. pentosaceus M103 (Pp) as single starter culture fermentation and combined (Lp/Pp) fermentation at a ratio of 1:1 at 6% inoculation (v/v). For control treatment, goat milk was fermented using yogurt starter, i.e., a combination culture of Streptococcus thermophilus and L. bulgaricus (St/Lb) at a ratio of 1:1 at 6% (v/v). The fermentation was performed by incubating the inoculated goat milk at 37°C for 18 h. The pH and degree of acidity were measured every 2 h during the fermentation process, whereas the physicochemical (pH, degree of acidity, lactose, protein, and viscosity) and microbial (total lactic acid bacteria/LAB) qualities were measured after the fermentation process. Data analysis revealed that the different starter cultures had no significant effect (P > 0.05) on the pH and degree of acidity, lactose and protein content, viscosity, and total LAB content. The goat milk fermented in this study had an average pH of 4.41 ± 0.11 and a degree of acidity of 1.26 ± 0.05%, a lactose content of 5.47± 0.80%, a protein content of 6.69± 1.52%, a viscosity of 1217 ± 395 cP, and a total LAB content of 9.57 ± 1.49 log CFU/mL. In conclusion, goat milk fermented using both single and combined starter cultures of L. paracasei M104 and P. pentosaceus M103 exhibited similar physicochemical and microbial qualities and required longer fermentation time compared with the control.

Abstract

Tujuan penelitian ini yaitu untuk mengetahui tingkat motivasi belajar siswa, untuk mengetahuipelaksanaan layanan bimbingan kelompok dengan teknikhome work assigment dalammeningkatkan motivasi belajar siswa dan untuk mengetahui hasil layanan bimbingan kelompokdengan teknikhome work assigment dalam meningkatkan motivasi belajar siswa. Subyek penelitianberjumlah 30 siswa Kelas VIII.6 dengan metode pengumpulan datanya menggunakandokumentasi, angket, dan observasi yang selanjutnya akan dianalisis menggunakan analisisdeskriptif kuantitatif dengan menggunakan rumus prosentase. Hasil pelaksanaan layananbimbingan kelompok dengan teknikhome work assigment dapat meningkatkan motivasi belajarsiswa sebesar 100%

Abstract

The purpose of this research is to know the congestion on the street toll road users. The problem in this research is the congestion and its impact on the road users, and how the solution to the congestion on the Brexit toll during Lebaran holiday season 2016. Population The study was conducted at East Brebes toll gate where the researcher distributed questionnaires to 80 respondents by purposive sampling method. Data analysis techniques use validity and reliability, simple linear regression, correlation coefficient, determinant coefficient, and hypothesis test. The result showed that there was a positive influence between congestion (X) and road users (Y), road congestion variation due to other factors of 95.4% while the rest of 4.6% was determined by other factors. With the probability significance of 0.005 t table> t table, it is concluded that individually the variables of congestion can affect the variables of users of toll road.

Abstract

Penelitian ini bertujuan untuk mengidentifikasi ketepatan pemilihan dan penataan lansekap pada Taman Balekambang, Solo. Studi difokuskan pada elemen softscape dan hardscape di taman yang mempunyai luas sekitar 9,8 hektar itu. Aspek yang dikaji meliputi fungsi dan perannya dalam kaitannya dengan RTH (Ruang Terbuka Hijau). Penelitian menggunakan paradigma rasionalistik, dengan metode deskriptif-komparatif, yaitu dengan membandingkan antara kondisi faktual dengan regulasi atau referensi yang berkaitan. Selain narasi, pembahasan juga disajikan dalam bentuk tabulasi dan grafis. Hasil penelitian menunjukkan bahwa elemen softscape di Taman Balekambang secara garis besar mampu memenuhi kategori RTH. Namun demikian, untuk elemenhardscapenya, Taman Balekambang belum memenuhi standar  kelengkapan yang dibutuhkan. Elemen softscape diketemukan kurang lebih 84 jenis tanaman, yang hampir semua sudah memenuhi syarat standar pemilihan tanaman. Keragaman karakter pohon ditemukan dalam bentuk tajuk indah (16,7%), semak berdaun indah (16,7%), pohon berbuah (35,7%), pohon beraroma (2,4%), pohon berbunga indah (5,6%), pohon berdaun indah (38,1%), peneduh (32,2%), perdu bunga indah (2,4%), rambat (2,4%) dan semak berbunga indah (5,6%). Selanjutnya, rekomendasi dari riset ini adalah pada upaya-upaya terkait pemeliharaan elemen softscape dan penyempurnaan elemen hardscape.

Abstract

BIOENKAPSULASI PROBIOTIK (Lactobacillus casei) DENGAN POLLARD DAN TEPUNG TERIGU SERTA PENGARUHNYA TERHADAP VIABILITAS DAN LAJU PENGASAMAN [Bioencapsulation of Prebiotics (Lactobacillus casei) with Pollard and Wheat Flour and its Roles for the Acidification Rate and Viability] An experimental was conducted in order to investigate the viability of bio-encapsulated probiotics Lactobacillus casei during yoghurt fermentation. Yoghurt fermentation was prepared on pasteurized 18% of skim milk medium and inoculated with 6% (v/v) of starters consisting of Lactobacillus bulgaricus. Streptococcus thermophillus and Lactobacillus casei with the proportion of 1:1:1 (v/v/v). Fermentation was conducted until the pH reached 4.5. Bioencapsulation was carried out through the formation of calcium-alginate bead gels with the addition of pollard or wheat flour. The results showed that bio-encapsulated probiotics took longer time (10 hours) to reach pH 4.5 as compared to non-bio-encapsulated  one (9 hoours). It also showed that bio-encapsulated probiotics with pollard resulted in a higher cell viabilyty after fermentation namely at 2.4 x 108 celss/g as compared to that encapsulated with wheat flour at 9.3 x 107 cells/g. Bio- encapsulation with pollard was able to maintain viability of prebiotics at 9.37 x 107 cells/g as compared to that of wheat flour and non filler encapsulation at 1.07 x 107 and 1.48 x 106 cells/g respectively. It was shown that alginate bio- encapsulation with addition of 2% (v/v) pollard or wheat flour can maintain probiotics viability up to 4 weeks. Keywords: bioencapsulation, probiotics viability, yoghurt fermentation

Abstract

The objective of this project was to produce shiitake-containing yoghurts as nutraceutical food. Preliminary analysis was conducted to measure nutrient contents of shiitake followed by evaluation of shiitake’s addition on the growth of yoghurt bacteria and probiotics. Yoghurt fermentation was conducted at 420C until pH reached 4.5. Culture starter used were Lactobacillus bulgaricus, Streptococcus thermophillus and Lactobacillus casei with proportion of 1:1:1. During fermentation, acidification rate, pH, titratable acidity, total of yoghurt bacteria, total of probiotics, and concentration of lentinan in the products were measured. The result showed that shiitake powder contains crude protein (22.35%), starch (16,66%), fat (11,56%), ash (7.73%), dry matter (87.57%), dietary fibre (33.35%) and unsoluble dietary fibre (5.45%). The result also showed that supplementation of 4% shiitake powder support the growth of probiotics L. casei and resulting in growth optimum at 1.26 x 109 cells/ml and 2.86 x 109 cells/ml after incubation of 6 and 10 hours respectively. Time needed to reach pH 4.5 of yoghurt supplemented with 4% shiitake powder was achieved after 7 hours of incubation as compared to 8 hours for the unsupplemented one. Total number of probiotics after fermentation of yoghurt with 4% shiitake was higher (7.16 x 109 cells/ml) as compared to the control at 5.3 x 109 cells/ml. Lentinan analysis in yoghurt showed that supplementation 4% of shiitake powder resulted in the highest lentinan accumulation at 22.8% compared with 2.3% for control and 2.9% for 2% shiitake supplementation. It can be concluded that yoghurt shiitake could be applied as nutrient food due to its high nutritious and lentinan content in the product. Key words : Yoghurt, shiitake, nutraceutical food

Abstract

ABSTRACT: RELATIONSHIP OF ZINC AND VITAMIN A INTAKE WITH DIARRHEA INCIDENCE IN CHILDREN 1-5 YEARS Background: Diarrhea is a serious health problem in developing countries. Diarrhea is a major cause of morbidity and mortality in children 1-5 years. Infectious diarrhea is the biggest cause of diarrhea, that can be caused by viruses, bacteria, and parasites. Diarrhea can be prevented by giving children nutritious food so they have a strong immunity. Some nutrition that can prevent diarrhea are zinc and vitamin A. This study want to determine the relationship between zinc and vitamin A intake with the diarrhea incidence Methods: This was an analytic with cohort design using zinc and vitamin A intake as an independent variables and diarrhea incidence as dependent variabel. Sample was 54 children under 5 years, at Yosomulyo Health Center, Metro in 2015. Yosomulyo Health Center was selected using purposive sampling technique, because it had the most diarrhea incidence in Metro City. Results: Subject with low zinc intake were 7 respondens (13%), 3.7% respondens with low vitamin A intake, and 9.3% of subject had a diarrhea. As a conclusion, there is a relationship between zinc and vitamin A intake with diarrhea incidence in children 1-5 years (P<0,05). To improve zinc and vitamin A intake in children 1-5 years, it was suggested that nutrition officer of Health Center must be proactive in giving counseling to the mother and give an effort to vitamin A distribution so all children under 1-5 years have it in February and AugustPendahuluan: Penyakit diare merupakan masalah kesehatan yang serius di negara-negara berkembang. Diare adalah penyebab utama morbiditas dan mortalitas pada balita kurang dari 5 tahun, Diare infeksiosa merupakan penyebab kejadian terbesar diare, yang dapat disebabkan oleh virus, bakteri, dan parasit. Diare dapat dicegah dengan memberikan anak makanan bergizi sehingga anak mempunyai kekebalan yang kuat. Zat gizi yang dapat mencegah terjadinya diare diantaranya adalah seng dan vitamin A. Tujuan penelitian adalah untuk mengetahui hubungan asupan seng dan vitamin A dengan kejadian diare.Metode: Penelitian ini menggunakan desain studi kohort, dengan variable independen adalah asupan seng dan vitamin A dan variabel dependen adalah kejadian diare. Sampel berjumlah 54 anak, di Puskesmas Yosomulyo Kota Metro tahun 2015, yang dipilih secara purposive sampling karena mempunyai kejadian diare terbesar di wilayah MetroHasil: Hasil penelitian menunjukkan bahwa responden dengan asupan seng kurang sebanyak 7 responden (13%), Sebanyak 3.7% responden mempunyai asupan vitamin A kurang, dan Sebanyak 9.3% responden mengalami diare. Ada hubungan antara asupan seng dan vitamin A dengan kejadian diare pada anak umur 1-5 tahun (p<0,05). Untuk meningkatkan asupan seng dan vitamin A pada anak balita, diperlukan keaktifan petugas gizi Puskesmas dalam memberikan penyuluhan kepada ibu balita dan mengusahakan agar semua anak di bawah 5 tahun mendapatkan kapsul vitamin A di bulan February dan Agustus

Abstract

Background of Study: End Stage Renal Disease was ranked in the sixth position as the death causal in all hospital in Indonesia, in 2006 with mortality rate 2521 people. The data according to Depkes DIY in 2007 state that there are 87 new cases of End Stage Renal Disease. In the end stage renal disease, proper nutrition and adequate food will give better quality of life. Preliminary study in the Hemodialysis unit RSUD Panembahan Senopati shows that, 20 patientswho runhemodialysistherapywith the diagnosisof end stage renal disease, fiveof them experiencededema, twopatients experiencedanorexia, with these data the researcher conclude that there are manypatients whodo notobey with their dietpattern. So it will make their quality life going decrease, it can be proved by weight lossand weight gainin edema patients. Objective:This Study aimed to know a corellation between the pursuance of diet pattern of end stage renaldisease with patient life quality in Hemodialisa Unit of RSUD Panembahan Senopati Bantul . Methods:This study used analysis descriptive with Cross Sectional design approach. The sample was taken with Consecutive Sampling. It means that 104 patients of end stage renal disease who are undergoing hemodialysis treatment in RSUD Panembahan Senopati Bantul were involved. Result:Most of the patientswho areundergoinghemodialysistherapyobeyin implementing the diet program of end stage renal disease. Most ofpatients who are sufferingend stage renal disease in hemodialysis unit of Panembahan Senopati Bantul local general hospitalhave agood quality of life. The pursuance of diet pattern with the quality of life in the patient of end stage renal disease has a Significatn Corellation. It was shown by the result of Kendal Taup-value 0,000 &lt; 0,05. Conclusion:There is corellation between the pursuance of diet pattern of end stage renal disease with the quality of life of patients in hemodialysis unit of RSUD Panembahan Senopati Bantul Keyword : The pursuance of diet pattern, Quality of life.
